Looking for good varnish for canoe

I am in the final stages of a 14' puddle duck woodstrip canoe and am now thinking of what kind of finish to put on it. I used RAKA epoxy, very satisfied, and am now wondering what kind of varnish to put on it. The canoe will see use in both salt and fresh water. I would probably prefer to use a waterbased finish due to its easier use, but will use a solvent based finish if it is the better one. What is the general opinion and experience out there? I plan on brushing it on but can also spray it. Because this is my first wood strip boat, first of many hopefully, I am looking for advice. Thanks in advance.
