Fittings - deck and hatch

Sometime in the past year or so someone posted a link for making deck fittings. What I am looking for is an easy way to make wood fittings. I think I need two or three different styles. Style one, for use on top of the deck for deck lines. Style two for holding down Leidy hatches, I believe there are two types required for this application, one of which is the same what is on the decks and the other is a modified version for hatch themselves so the bungee cord can be removed. The third thing I am thinking about is to put in tie downs for a future battery.

I remember this link showing making the fittings kind of like a donut (a circular disk with a hole in it) and then cutting them in half after your rounded over the edges. What I really need to know is:

What size disk/holes to make?

How thick should the fittings be?

Is there a preference to the grain direction?
