wood suitable for kayak construction

I am thinking of building a sea kayak (haven't bought a book yet but I plan to). I have about 200 fbm of clear eastern white cedar in lengths of 8 to 10 feet aND rough thickness of between 3/4 to 7/8 inch, 4 to 10 inches wide. Is this suitable wood for building a sea kayak using the strip method?
