fastest S&G Kayak that still turns

Hi everyone this is my first time posting on this BBS and I would like customers opinions on whitch S&G kayak is the fastest yet still can turn when edged or leaned without a skeg or rudder system and also not be completly made for flat water conditions. I would really like to build a first kayak of wood and have it meet all my expectations. I am 5'10" and 220lbs. I currently borrow or rent fiberglass and carbon fiber models but love the beauty of wood. I have been bitten hard by the building bug and would like to hear all opinions on the S&G method only Kayaks Please. I know I am asking for alot, please E-mail me responses if it is against BBS rules to post your opinions about speccific manufacturers.

P.S All you builders who have posted pictures here sure have done a great job on your kayaks, It helps give me the courage to try my own.
