Epoxy: Epoxy Sealer Coat/Joining Hull to Deck

I've applied a sealer coat of epoxy to the outside of the deck and hull of the Guillemot I'm building. Are there any benifits to also applying the sealer coat to the inside of the hull and deck before fiberglassing?
I'm also looking at the description of how to apply the fiberglass tape to the inside of the boat bonding hull to deck as per Nick Schade's book. Since I,m pretty sure I want hatches in this boat, would having these holes cut out before hand ease the job of taping this sheer line seam on the inside? I'd really like to avoid sticking my head in the cockpit with a long stick rolling out the tape,this seems very unpleasant!
