The guys who market West System epoxy have a boatbuilding book with a section on compound(tortured)plywood design and construction. They don't give any source of plans, they say these boats have large length to beam ratios, and they spend a lot of the design section on how to make models to test your design before building.
For a boat for the kids, there is a guy who sells inexpensive plans for a semi-compound design. He has a web site. Look for "Swamp Yankee Boats". The boat is more of a canoe than a kayak, though. I took a shot at modifying it into a kayak shape, but a model cracked when I tried to fold it. Re-reading this, I should have followed the Gougeon Brothers advice on model making.Best of luck, and let us know if you find a good plan.
