Wait about 10 years.
Seriously though, Polishing is wasted effort on a boat to be used. If your varnish job doesn't knock your socks off by itself, then apply a couple more coats for practice.
Put the time into practicing your varnish technique. When you're confident of your technique you'll be able to apply a mirror finish with a foam brush in 30 minutes.
