plan reading - please help

We have reciently purchased canoecraft and are trying to layout the bob special. We have built 12 plywood kayaks and understand the layout from a baseline. We are having trouble understanding "table of heights, butts" Why dont you just make the pattern for each station and then mount the station at the correct elevation on the strong back?
