strip vs. plywood

I built a frame and canvas kayak years ago and have a hankerin' to build another yak. Kinda deceided on the strip ones to do first but I'm not 100% sure. I know its more work and probably more costly but they sure are beautiful and as a craftsman (I renovate old homes and do a bit of cabinatry) I lean towards the "stripper"(love saying that..lol)....What does anyone have to offer in terms of their experiances? Also I think if I start the "stripper" (ewwww) I might not have it ready for this summer..... Thanx all,
