I do much of my construction with the kayak suspended from the ceiling [allows for very convenient height control when stitching].
I control the swing [left/right, back,forth] by adding a reinforced stitch that is formed into a loop on the bottom of the hull. I have a weighted bucket on the floor and I add bungie cords [as many as required to damp the movement to the degree I want] or a length of rope to anchor the hull.
Sanding and planing are done on rigid sawhorses.
