hi will, if you made the plywood strips 3/4 of an inch wide the gap would be less, but then it would be a strip boat... if you are getting an air gap, in other words the panels aren't even touching 1/2 mm or so then that's a minor problem. Me thinks you are looking too closely at things, a 1mm wide line of thickened epoxy at a long skinny joint is not going to be detracting from anything when the first coat of varnish is applied.
