I used to think the same thing until I designed my own kayak from scratch. The plans look simple because all the hard work has been already been done :-).

Try it yourself, it is a very rewarding experience to design your own kayak. But, keep track of your time - if you would pay yourself a buck an hour,(and consider the cost to buy enough materials to make a couple of prototypes) you will realize that $100.00 for a set of plans is a real bargin.
