varnishing and how many cans

Just got my first 2 coats of varnish on my CLC's hull. How many coats should I be getting out of the can? I am using the varnish that CLC sells/recommends.

I am rolling them on and then tipping out. I am currently about 1/2 through the can at only the above 2 coats.

Do you really need 2 qts. worth or am I just putting them on thick. I had thought that someone said 1 qt. would be enough for multiple coats over the whole kayak.
