Monty,
I used epoxy / wood flour on most of the strips on my kayak. I started out using Titebond, but it runs too much, and in my opinion is just about as hard to sand as epoxy. Also, you will have less voids between the strips by using epoxy. I thought the epoxy joints looked much better than the yellow-glued joints, although I only finished the deck bright, and I did not use bead-and-cove strips.
Bigger boats built using the strip, cold-moulded technique (as explained in Gougeon Bros. on Boatbuilding), use epoxy for the strips. The book on baltek duracore construction also explains the use of epoxy for the strips. There must be something to it.
I use 10cc syringes for mixing small batches of epoxy. You can get them for free at many pharmacies. They are the ones used for orally administering liquid medicines. I always wash them first as I think they have a lubricant on the plunger. Mark the syringes with a piece of tape, as to resin / hardener. Keep them in a plastic baggy, and they will last for a long time.
