Cockpit Coaming wood

I'm just about ready to fit the cockpit coaming using the "stacked donut ring" style. I'm using a total of 4 layers with the top a greater circumferance than the other 3. The wood I'm using is quarter inch thick birch plywood. I'm staining it walnut so it will go with the dark cedar strips that act as accent stipes on my kayak (Endeavor 17). My question is birch plywood an acceptable wood to use? Unfortunately, Okume plywood is nowhere to be had in Central New York. Please advise here on this message board.
